Boneless Pork Loin Roast with Herbed Pepper Rub

Herbed Pork Loin Roast 

1-3 lb. Niman Ranch All-Natural Boneless Loin Roast

Rub:

2 tablespoons cracked black pepper

2 tablespoons grated Parmesan cheese

2 teaspoons each: dried basil, dried rosemary, dried thyme

1/4 teaspoon garlic powder

1/4 teaspoon salt

In small bowl, combine all rub ingredients and mix well. Apply rub to all surfaces of the pork roast. Place in shallow roasting pan and roast in oven at 350°F for approximately 1 hour, or until internal temperature reaches 150°F (using meat thermometer). Let rest 5 minutes before slicing and serving. Serves 6-8.
