Boneless Pork Loin Roast with Herbed Pepper Rub

1-3 lb. Niman Ranch All-Natural Boneless Loin Roast
2 tablespoons cracked black pepper
2 tablespoons grated Parmesan cheese
2 teaspoons each: dried basil, dried rosemary, dried thyme
1/4 teaspoon garlic powder
1/4 teaspoon salt
- In small bowl, combine all rub ingredients and mix well.
- Apply rub to all surfaces of the pork roast.
- Place in shallow roasting pan and roast in oven at 350°F for approximately 1 hour, or until internal temperature reaches 150°F (using meat thermometer).
- Let rest 5 minutes before slicing and serving.
