Ham and Egg Breakfast Strata
This decadent and delicious ham and egg breakfast strata is the perfect use for that leftover Niman Ranch ham. Putting everything together the night before makes for a super simple morning preparation, and having all the flavors meld together in the fridge overnight makes for a great dish. Make this the centerpiece of your holiday breakfast, or add it to a big brunch spread. Don’t be afraid to substitute your favorite Niman Ranch breakfast sausage, bacon, or add in some peppers and onions to change it up!

14 oz Niman Ranch Ham, cubed
1 box seasoned croutons (about 5 oz) OR half loaf of country style bread loaf, cubed
1 1/2 Cup Cheddar Cheese, Shredded
1 Cup Swiss Cheese, Shredded
1 Cup Pepperjack Cheese, Shredded
8 eggs
1 pint Half and Half
1 cup Milk
1 1/2 tsp Dry Mustard Powder
2 tsp salt
1/2 Tbsp black pepper
Cooking Instructions
- Beat your eggs and add half and half, milk, mustard, salt and pepper.
- Layer the ingredients into a 9x13 baking pan in the following order: croutons/bread, cheese (set aside just a little to sprinkle on the top), ham, egg mixture, final sprinkling of cheese.
- Cover the pan and refrigerate overnight.
- When ready to bake, let the mixture temper for 20-30 minutes while oven preheats to 325° F.
- Bake for ~1 hour or until the center is firm.
