Lamb Sausage

This home made Lamb Sausage recipe is a great recipe for both the adventurous and simple cook. Our Lamb Program Manager loves to make this sausage and put it on his lamb sausage pizza with arugula, though it’s a great substitute for any recipe calling for a fennel-based sausage. Try it with eggs, spaghetti sauce or in a casserole as well.


1 pound Niman Ranch ground lamb

2 teaspoons Kosher Flake Salt

1 teaspoon Penzey's California Seasoned Pepper

1 teaspoon Fennel Seeds

3/4 teaspoon Roasted Garlic Powder

1 teaspoon Cumin Seed

Cooking Instructions

  1. Mix all the ingredients together thoroughly in a bowl for at least 2 minutes. Using your hands is most effective.
  2. Cook as crumbled sausage or roll into a ball, as shown in the picture, and stamp into patties. The patties can be used cut up on pizzas, whole on breakfast sandwiches and more.
