Prosciutto and Pesto Panini

8 slices panini bread
3/4 lb fresh mozzarella, sliced in quarter inch thick slices
7 oz pesto
1/4 lb Niman Ranch Prosciutto
Extra virgin olive oil to drizzle on panini press
Cooking Instructions
- Slice the mozzarella into quarter-inch thick slices.
- To assemble the sandwich, spread pesto on each slice of bread (inside only). Layer with 1-2 slices of prosciutto and 2 slices of mozzarella (enough to cover the slice of bread). Put sandwich together.
- Drizzle a little bit of olive oil on the panini
- Place sandwiches on panini press and drizzle top of each sandwich with olive
- Press the paninis and grill for about 4-5
- Cut in the middle and serve
