Spicy & Sweet Basil Meatballs in Curry

Ingredients

Meatballs: 

1/2 lb Niman ground beef

1/2 lb Niman ground pork

1/2 cup panko

1/4 cup unsweetened coconut flakes

1/4 cup chopped scallions

1/4 cup chopped basil

2 T Spiceology Berbere

2 t fish sauce

2 T sugar

2 garlic cloves, chopped

1 large egg

Sauce: 

14oz coconut milk

2 T Spiceology Curry Madras

1/4 cup vegetable broth

1T sugar

1T fish sauce

Juice and zest of lime

Cooking Instructions

  1. Combine all meatball ingredients and form into 12 meatballs.
  2. Brown in 2 batches each with 1T oil.
  3. Set cooked meatballs aside
  4. Simmer sauce ingredients (except for zest) for 5 mins.
  5. Add browned meatballs and cook over medium-low heat for 15 mins, turning occasionally.
  6. Top with zest.
