Meatballs:
1/2 lb Niman ground beef
1/2 lb Niman ground pork
1/2 cup panko
1/4 cup unsweetened coconut flakes
1/4 cup chopped scallions
1/4 cup chopped basil
2 t fish sauce
2 T sugar
2 garlic cloves, chopped
1 large egg
Sauce:
14oz coconut milk
1/4 cup vegetable broth
1T sugar
1T fish sauce
Juice and zest of lime
Cooking Instructions
- Combine all meatball ingredients and form into 12 meatballs.
- Brown in 2 batches each with 1T oil.
- Set cooked meatballs aside
- Simmer sauce ingredients (except for zest) for 5 mins.
- Add browned meatballs and cook over medium-low heat for 15 mins, turning occasionally.
- Top with zest.
