Stuffed Baked Potatoes with Shredded Beef or Pork

- 1 package of Niman Ranch Fat Tire shredded beef or pork
- 4 large russet potatoes
- 2 tablespoons olive oil
- 3 teaspoons salt
- 2 teaspoons freshly ground black pepper
- 1 cup sour cream
- 1-2 jalapeños sliced into wheels (remove seeds for less heat)
- 1 bunch green onions, sliced, white parts only
- 1 cup cheddar cheese, shredded
Cooking Instructions
- Preheat oven to 400 degrees.
- Wash and dry potatoes, then make a small slice in each one, approximately 2” long.
- Rub each potato with olive oil and sprinkle generously with salt and pepper.
- Bake potatoes for one hour, or until tender and cooked all the way through.
- Meanwhile, heat shredded beef or pork according to instructions on package.
- Using a towel so you don’t burn your fingers, push on both ends of each potato to open them.
- Top each potato with shredded meat, cheese, sour cream, jalapeño and green onion.
- Serve hot.
