Triple Threat Niman Meatballs

Ingredients

1 pound Niman Ranch Ground Beef

½ pound Niman Ranch Ground Pork

½ pound Niman Ranch Ground Lamb

2 oz garlic, minced

2 oz shallot, minced

2 eggs

1 cup freshly grated Romano cheese

2 Tsp Spiceology Apple Cinnamon Blend

2 Tsp Spiceology Candied Bacon Sriracha Blend

2 Tsp Fresh chopped flat parsley

salt and ground black pepper to taste

2 cups white bread - crust removed small cubes

1/4 cups buttermilk

3/4 cup 1/2 and 1/2 or whole milk

4 oz olive oil

Cooking Instructions

  1. Combine Niman Ranch Ground Beef, Ground Pork and Ground Lamb in a large bowl. Add garlic, shallots, eggs, cheese, Spiceology Apple Cinnamon Blend, Spiceology Candied Bacon Sriracha Blend, parsley, salt and pepper and mix well.
  2. Blend bread crumbs into meat mixture. Slowly add the buttermilk/whole milk mixture 1/4 cup at a time.
  3. Shape into meatballs.
  4. Heat olive oil in a large skillet. Sauté meatballs in batches - browning and creating a slightly crisp texture cooking to an internal temperature of 165 degrees.
  5. Remove from heat and place on a mesh rack to allow grease to drip from meatball.
