Fresh Lamb

Our ability to provide consistent, tender lamb year round is the result of raising our animals in regions with alternating growing seasons. We partner with fewer than a dozen ranching families in the Pacific Northwest, most of whom are multiple generation farmers. Our lambs are 100% traceable back to their birth ranch.

Gyro Slices

Our fully cooked gyro is a blend of beef and lamb seasoned with traditional Mediterranean spices like garlic, oregano and marjoram. Thinly sliced, simply heat and layer on a warm pita with fresh vegetables and tzatziki sauce.

Ingredients

Beef, lamb, water, contains 2% less of salt, dehydrated onion, dehydrated garlic, dehydrated bell pepper, spices. 

Cooking Instructions

Pan-fry/oven-bake/air-fry until slightly browned and heat through. “Cook like you would bacon!”

Lamb Merguez Sausage

Lamb sausage boldly spiced with traditional flavors to deliver the characteristic intense flavor and spice one would expect from a Merguez sausage. Best served grilled, and pairs well with couscous, hummus, or other Mediterranean-inspired dishes.

Cooking Instructions

Pan fry in small amount of oil or grill to an internal temperature of 160°F as measured by a food thermometer. 

Ground Lamb

Our ground lamb has a distinctive, mellow flavor that’s never gamy. We use all whole muscle cuts to deliver a high-quality product and outstanding flavor. Our ground lamb will be the star at your next cookout or dinner party!

We use a variety of pure breeds with cross-breeds that fit the ranching climate and provide consistent high quality meat. Raised on pasture, vineyards and open range, our lamb are outdoors for most of their lives. They either graze on alfalfa or are fed a diet of high quality grain and roughage for finishing, which allows for consistent tasting meat. The young age of our lamb, coupled with their low stress environment and high quality diet, ensures a mellow flavor that’s never gamey.
