Air Fryer Pulled Pork Egg Rolls

Ingredients

- 1 1/2 pounds Niman Ranch pulled pork
- 1/4 cup soy sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon Chinese 5 Spice
- 1/2 teaspoon white granulated sugar
- 1/2 teaspoon salt
- 3 cups cabbage shredded or finely chopped
- 1 carrot shredded
- 4 green onions chopped
- 20 egg roll wrappers
- water
 for sealing wrappers
- 2 - 3 tablespoons vegetable oil for brushing the basket and lightly brushing the egg rolls

Cooking Instructions

  1. Place a large skillet over medium heat and add the pulled pork, stirring occasionally with tongs, until heated through. Remove from heat and set aside.
  2. Meanwhile, stir together the soy sauce, sesame oil, sugar, 5 spice, and salt in a small bowl. Pour over the pork and stir to combine.
  3. Add the chopped cabbage, shredded carrots, and chopped green onions to the skillet. Cook and stir the egg roll filling until the cabbage has wilted, about 5 minutes. Remove from heat and let cool for 5 minutes.
  4. Place an egg roll wrapper in front of you so a corner points toward you like a diamond. Using a pastry brush, wet the edges of the wrapper with water.
  5. Scoop 2-3 tablespoons of filling in the center of the wrapper, being careful not to overfill and break the wrapper. Fold the bottom corner up over filling. Bring in left and right corners to the center and roll egg roll away from you.
  6. Place egg roll on a lightly oiled sheet pan. Repeat until all wrappers are filled.
  7. Lightly brush the basket of your air fryer with a very small amount of oil then lightly brush each egg roll with oil. Working in batches, cook egg rolls at 375 degrees for 12-15 minutes, turning half-way through to ensure even browning and crispness, and cooking only 4-5 at a time so they fit in the frying tray in a single layer.
  8. Transfer egg rolls to a brown paper bag to remove any excess oil. Continue cooking in batches until all egg rolls are done.

Serve immediately.
