Corn Ham Chowder
We all love warm and hearty comfort food, especially on chilly days. This Chowder combines Niman Ranch Applewood Smoked Uncured Ham with a creamy corn and potato base, making it the perfect dish to warm up at dinner time.

2 cups of Niman Ranch Applewood Smoked Uncured Ham, Diced
14oz frozen corn
1 large sweet potato, peeled and cubed approx 1/2"
2lbs red potatoes, washed and cubed approx 1/2"
3 cups of chicken stock
1 cup of water
1 cup of heavy cream, (optional: dairy-free)
1 large onion, diced
12oz sour cream, (optional: dairy-free)
2 celery stalk, diced
2 bay leaves
2 tsp kosher salt
1 1/4 tsp black pepper
3/4 tsp ground thyme
1/2 tsp oregano
1 tsp garlic, minced
2 tbsp butter, (optional: dairy-free)
Cooking Instructions
- Place a large stock pot over medium heat and add the onions and butter.
- Cook for a few minutes until the onions are translucent, then add the celery, ham, sweet potatoes, red potatoes, garlic, all the seasonings, chicken stock, water and mix well.
- Mix in the heavy cream and sour cream.
- Cook for 20-30 minutes until the potatoes are cooked. Mix in the corn.
- In a small bowl mix 1/4 cup of water and 1 tbsp cornstarch, then add to the soup to thicken. Cook for an additional 10 minutes. Enjoy!
