Loaded Baked Potato Soup

Bacon is the shining star of our Loaded Baked Potato Soup, which combines tender potatoes, onions, and cream. With all your favorite garnishes, it’s the perfect meal for any occasion.

Ingredients

12oz Niman Ranch Applewood Smoked Uncured Bacon, chopped

2lbs potatoes, peeled and cubed (approx 1/2" pieces)

1 large onion, diced

4 cups of chicken stock

8oz cream cheese, (optional: dairy-free)

10oz cheddar cheese shreds, (optional: dairy-free)

2 cups of heavy cream, (optional: dairy-free)

2 tsp salt

1 tbsp chives

1 1/4 tsp black pepper

1/2 tsp paprika

1/2 tsp garlic powder

dash of cayenne

1 tbsp Worcestershire sauce

Cooking Instructions

  1. Place a large stock pot over medium heat and allow the pan to heat up for a couple of minutes.
  2. Add the diced bacon and cook until browned.
  3. Line a plate with a paper towel and once the bacon is cooked remove and place on the plate.
  4. Add the onions to the pot and cook until translucent (reduce heat if they brown too quickly). Once cooked add the chicken stock and potatoes to the pot.
  5. Cook for about 20 minutes or until the potatoes are fork tender. Then add in the spices, worcestershire sauce, the cream cheese and mix well.
  6. Once the cream cheese is broken down add in the heavy cream, cheese and the bacon (reserve some bacon for topping your soup).
  7. Cook for an additional 10-20 minutes until the soup has thickened.
    *Optional toppings, crispy bacon, fresh chives, cheese and sour cream. Enjoy!
