Nacho Ordinary Baked Meatballs

These nacho ordinary baked meatballs come with their own nacho bar built right in! It only takes minutes to mix up them up and then bake them off in your oven. Top them with traditional nacho toppings and serve them up to your hungry family. This is a recipe guaranteed to be a hit in your household and one you’ll want to make many times over.

Ingredients

Meatballs: 

  • 2lbs Niman Ranch 80% lean Angus ground beef
  • 2 eggs
  • 5 cups panko bread crumbs
  • 1 cup sweet corn, drained
  • 1 cup black beans, drained
  • 2 jalapenos, seeds removed and finally chopped
  • 5 cups Mexican blend shredded cheese
  • 1/3 cup mild taco sauce
  • 2 tbsp of your favorite taco seasoning

Toppings

  • Shredded cheese
  • Shredded lettuce
  • Tomatoes, diced
  • Black olives
  • Jalapenos
  • Cilantro
  • Sour cream
  • Nacho cheese, melted
  • Tortilla crisps

Cooking Instructions

  1. Preheat your oven to 425 F.
  2. In a medium-sized mixing bowl, add in your ground beef, cheese, taco sauce and taco seasoning. Then using your hands mix the ground beef with cheese, sauce and seasoning.
  3. In a separate bowl whisk your eggs. Add the eggs to your beef mixture along with your corn, black beans and chopped jalapenos. Mix again.
  4. Measure out the ground beef mixture using a spoon or ice cream scoop. Roll into meatballs about 1 inch in diameter. This should make about 25-30 meatballs.
  5. Place into a 9x13 inch baking dish and bake off in your oven for 30-35 minutes.
  6. Remove from your oven and top with all of your desired toppings.
  7. Recommend serving with a dollop of sour cream.
