German Apple and Pork Breakfast Sausage Pancake

This recipe is great for ‘special day’ breakfasts because it doesn’t take up too much time and can be started the night before. This dish is sometimes referred to as a Dutch Baby.

Ingredients

  • 4 eggs
  • ½ cup unbleached all-purpose flour
  • ½ teaspoon baking powder
  • 7 ½ Tablespoons sugar
  • 1 pinch salt
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 Tablespoon unsalted butter, melted
  • 1 teaspoon ground nutmeg, divided
  • 6 Tablespoons unsalted butter
  • 1 teaspoon cinnamon, divided
  • 1 large tart apple - cored and thinly sliced (peeled if desired)
  • I package Niman Ranch’s Pork Breakfast Sausage (8 oz.)
  • Confectioners' sugar, for serving
  • 2 Tablespoons maple syrup (plus extra for drizzling)

 

Cooking Instructions

  • In a large bowl, blend eggs, flour, baking powder, 1 tablespoon sugar, and salt. Gradually mix in milk, stirring constantly. Add vanilla, melted butter, ½ teaspoon nutmeg, and ½ teaspoons of cinnamon. Let batter stand for 30 minutes or overnight.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Melt 4 tablespoons of butter in a 10-inch ovenproof skillet (cast irons work great), brushing butter up on the sides of the pan. In a small bowl, combine 1/4 cup sugar, ½ teaspoon cinnamon, and ½ teaspoon nutmeg. Sprinkle mixture over the butter. Line the pan with about half of the apple slices. Then lay the sausages over the apples. Sprinkle ½ tablespoon of sugar over apples and sausages. Place the pan over medium-high heat until the mixture bubbles, then gently pour the batter mixture over the apples and sausages.
  • Bake in preheated oven for 15 minutes. Reduce heat to 375 degrees F (190 degrees C) and bake for 10 minutes.
  • While pancake bakes, melt the remaining 2 tablespoons butter over medium-high heat. Add the other half of the apple. Cook, stirring occasionally, for about 5 minutes, until apple is crisp-tender and browning on edges. Add 2 tablespoons of sugar and maple syrup. Cook 2 to 3 minutes more, or until the apple is tender.
  • Once the pancake is done cooking take it out of the oven and top it with the cooked apples. Cut into wedges, serve on individual plates, drizzle with maple syrup, and enjoy!
