Pulled Pork Sandwich with Spicy Slaw

-½ head green cabbage, shredded
-½ head red cabbage, shredded
-2 carrots, shredded
-2 jalapenos, seeded and thinly sliced into rounds
-¾ cup mayonnaise or more to taste
-2 tablespoons apple cider vinegar
-4 teaspoons sugar
-½ teaspoon celery salt (optional)
-Sea salt and freshly ground black pepper to taste
-1 pound Niman Ranch pulled pork
-6 hearty rolls
Cooking Instructions
- In a small mixing bowl combine mayonnaise, apple cider vinegar, sugar, celery salt (if using), salt and pepper. Whisk to combine. Set aside.
- In a large bowl, combine both cabbages and carrots. Toss until combined.
- Pour half of dressing over cabbage and carrots and toss until thoroughly combined. Add more dressing as needed to reach the consistency you like. Place in refrigerator.
- Meanwhile, place pulled pork in a large skillet over medium-high heat until hot and fully heated through. Add a couple of tablespoons of water to the skillet to help loosen the meat if necessary.
- Place pulled pork onto rolls, top with coleslaw and jalapeno slices. Serve immediately.
