Smoked Bacon Breakfast Sausage and Sweet Potato Hash

This sweet potato breakfast hash is loaded with flavor and has the perfect sweet/savory balance. Pan-fried sweet potatoes are cooked with Niman Ranch’s Smoked Bacon Breakfast Sausage, greens, apples, and topped with an egg.

Ingredients

  • 1 medium sweet potato peeled and diced small, ½” chunks
  • 1 package Niman Ranch’s Smoked Bacon Uncured Breakfast Sausage, cut into ½” chunks
  • Salt, to taste
  • pepper, to taste
  • 1 tsp cinnamon, divided
  • 1/2 tsp onion powder, divided
  • 1/2 tsp garlic powder, divided
  • 1/2 tsp sage, divided
  • 1/2 tsp turmeric, divided
  • 1 large honey crisp apple diced, or any red apple available
  • 3 cups kale chopped
  • 2-3 Tbsp ghee or butter, for cooking
  • Eggs, optional

Cooking Instructions

  1. In a large skillet, add 1-2 Tbsp ghee and heat to medium-high. Add potatoes, sprinkle with salt and pepper, cook about 2 minutes uncovered, or until potato begins to crisp and brown.
  2. Combine cinnamon, onion powder, garlic powder, sage, and turmeric into a small bowl.
  3. If making the eggs, lightly grease a skillet with the butter. Cook the eggs to your preference.
  4. Cover the skillet and lower heat to medium, cook another 3-5 minutes, stirring once midway. Uncover and add season mixture, sausage pieces, apples, kale, and then cover again and cook 2-3 minutes.
  5. Uncover, plate, and place a cooked egg (if using) on top of each portion and serve right away.
