Applewood Smoked Bacon & Brussels Sprouts

8 slices Niman Ranch All Natural Applewood Smoked Uncured Bacon, diced and
½ Yellow onion, diced
cooked until crispy (bacon fat reserved)
1-pound Brussels Sprouts, bottom 1/3 removed of stem end
½ - 1 cup chicken broth, depending on the size of the skillet
1 tablespoon balsamic vinegar
1 tablespoon fresh chives, chopped
Salt and freshly ground black pepper to taste
Cooking Instructions
- In a cast-iron or non-stick skillet, combine the onions and bacon.
- Cook until bacon is crispy and onions are soft and aromatic.
- Scoop onions and bacon from the pan with a slotted spoon and drain on paper towel, leaving as much bacon fat in the skillet as possible.
- In the same skillet, arrange Brussels sprouts, cut side down in a circular pattern in the reserved bacon fat.
- Pour in chicken broth. Cover and cook over medium heat for 10 – 15 minutes or until Brussels sprouts are tender and caramelized on the cut-side.
- Pour balsamic vinegar over the sprouts and cook for another minute or so.
- Garnish with crispy bacon, caramelized onions and chopped chives. Serve from the skillet.
*Serves 4 as a regular vegetable serving. Serves 6 to 8 for Thanksgiving buffet side serving.
