Ham and Pineapple Casserole

Ingredients

1 pound Niman Ranch ham, diced into ½-inch chunks  

2 tablespoons butter 

2 cups plain breadcrumbs 

1 large pineapple, peeled and cored, juice reserved 

1½ cups Cheddar cheese, grated 

1 tablespoon sea salt 

1 tablespoon cracked black pepper 

Cooking Instructions

  1. Preheat oven to 375 degrees F.
  2. In a large skillet over medium heat, place butter and stir occasionally until completely melted but not brown. Fold in the breadcrumbs and stir until well coated. Remove from heat and set aside.
  3. Cut ½ of the pineapple into small chunks, the other ½ into even smaller chunks (almost crushed). Set aside. Reserve extra juice.
  4. In a casserole dish, mix the pineapple juice, chunks and tidbits with the diced ham, Cheddar cheese, salt and pepper. 
  5. Top with butter-coated breadcrumbs. Bake for 30 minutes or until golden brown. 
  6. Serve hot and enjoy!
