Italian Sausage and White Beans with a Radicchio and Fennel Salad

Ingredients

1 pound Niman Ranch ground Italian sausage 

1 tablespoon + a splash extra virgin olive oil 

½ cup onion, small diced 

1 clove garlic, minced 

1 large tomato, small diced 

1 12-ounce can cannellini beans, rinsed 

1 small head radicchio, thinly sliced 

1 small fennel bulb, cleaned and thinly sliced 

3 tablespoons freshly squeezed lemon juice 

½ teaspoon salt 

½ teaspoon freshly cracked black pepper 

Rolls or sliced bread (optional) 

Cooking Instructions

  1. Place splash of olive oil in a heavy bottomed skillet, over medium heat. Add diced onion and cook for 3 to 4 minutes, until translucent but not browned.
  2. Add the garlicand ground sausage. Cook for about 10 minutes, stirring occasionally, until sausage is cooked through.
  3. Add the beans to the skillet and cook, stirring occasionally, until heated through. Remove from heat.
  4. In a large salad bowl, whisk together the 1 tablespoon oil, lemon juice, sea salt and black pepper. Place the radicchio and fennel in the same bowl, mix thoroughly. Set aside.
  5. To serve, scoop the bean-sausage mixture into a bowl and top with a pinch of the salad mix. If you like, accompany with slices of crusty bread for soaking up the goodness.
